Sourdough Discard Cinnamon Rolls

Every feed produces discard — the portion you pour off before adding fresh flour and water. Most people bin it, feel slightly bad about it, and do it again tomorrow.

Cinnamon rolls are the best argument for keeping it.

Discard is not the same as active starter

This is the distinction that makes discard baking work. Active starter is used for its lift — you need it at peak to raise a loaf. Discard is past that, so it brings almost no rise. What it brings instead is acidity and flavour.

Which means discard recipes pair it with baking powder or commercial yeast for the lift, and use the discard purely for taste. You are not waiting on it, and it does not need to be active.

What it does to a cinnamon roll

Cinnamon rolls are sweet, buttery and rich, and the usual failure is that they're one-dimensional — sugar on sugar with nothing underneath. Discard puts an acidic note under all of it, the same way buttermilk does in a pancake. The sweetness lands as flavour rather than just sweetness.

The acid also tenderises the dough. Discard rolls come out softer than the same recipe without it, and they stay soft a day longer.

Using it well

  • Cold discard straight from the fridge is fine. It does not need to come to room temperature.
  • Older discard is more sour. A week in the fridge gives a noticeably tangier roll than yesterday's.
  • Discard replaces some of the liquid AND some of the flour in a recipe — it's roughly half each by weight, so recipes written for it already account for that.
  • Hooch on top is fine. Stir it in for more tang, pour it off for less.

If your discard is piling up faster than you can bake

That's usually a sign you're feeding more than you need to. A smaller jar means less discard, and most people keep far more starter than their baking actually requires.
